Pretty little festive packages of vegetables tied up with bacon for your special occasion. Easy to make yet so elegant.
Sure to be a crowd-pleaser!
Ingredients:
1 pound parsnips, peeled and cut into long spears
1 pound baby carrots cleaned and trimmed
1 pound green beans, trimmed
1 tablespoon extra-virgin olive oil
10 slices thick-cut bacon (pastured-raised: ie. Applegate)
Fine sea salt and freshly ground black pepper
Instructions:
Preheat oven to 425F. Line a baking sheet with parchment paper.
Combine the parsnips, carrots, and green beans in a bowl and toss with the olive oil. Divide the vegetables into 10 bundles and wrap each tightly with a strip of bacon. Place the bundles, seam side down, on the prepared baking sheet. Sprinkle with salt and pepper.
Roast for 20 minutes, or until the vegetables are tender and the bacon is crisp. Transfer to a plate lined with paper towels to drain briefly, then remove the towels and serve hot.
Make It Ahead: Assemble the parcels up to 2 days in advance and store in an airtight container in the refrigerator. Bring to room temperature prior to roasting.
