Imagine starting your day with a Sweet Potato Frittata—a delicious, filling meal that perfectly aligns with your health goals. Here’s a sneak peek at this scrumptious recipe:

Chopped

Ingredients:

  • 2 peeled sweet potatoes

  • 2 large chopped zucchini

  • 1/2 cup chopped scallions

  • Handful chopped chives

  • 2 TB chopped parsley

  • 12 eggs

  • Sea salt & pepper to taste


Instructions:


  1. Roast the peeled and diced sweet potatoes at 375°F in a convection oven for 20 minutes.

  2. Sauté the scallions and zucchini until tender, then mix in the roasted sweet potatoes.

  3. Add 10 eggs to the mixture and cook for a few minutes, then stir in the chives and parsley. Add sea salt and pepper to taste.

  4. Transfer to the oven and bake at 375°F for 5 minutes or until solid to the touch.


This frittata serves 6-8, making it a perfect option for meal prepping and keeping you and your family satisfied throughout your busy days.
